This saison is one of the first beers they released over 10 years ago and is a damn fine representation of the type of saison that we fuck with. This beer has a very light tart character, a dry effervescence and just the right amount of funk that if you closed your eyes, you might think for just a moment that you’re on a rope swing in the Belgian countryside and Seal’s Kiss from a Rose is somehow playing in the background. This rustic saison was brewed with barley, rye, oats and wheat, fermented with a mixed culture in an oak tank where it continued to age for 3 months and then was refermented in the bottle with brettanomyces.
